Banana Bread

Total time: 55 minutes
Yields: 8 slices

2 eggs
1/2 cup butter, softened
1/2 cup maple syrup
2 bananas, mashed (the browner the better)
1 extra banana if you want one on top to decorate
1 tablespoon vanilla essence
1/4 cup plain yogurt
1 teaspoon baking soda
1 1/2 cups gluten free flour
2 servings Dose & Co collagen creamer (optional)

Pre heat the oven to 180 degrees celsius - fan bake. Line a loaf pan with baking paper.
In a bowl, beat the eggs, then add the butter and maple syrup. Mix well.
Add the mashed bananas, yogurt, baking soda, vanilla and salt. Mix and add the flour and collagen creamer. Make sure all the mixture is well combined. 
Pour the batter into the loaf pan and place the sliced banana on top - bake for 50 minutes or until a knife or toothpick poked in it comes out clear. 
Let the bread cool on a wire rack before before serving. It is best served warm with butter or yogurt.
